Unlike my usual crunchy-cluster granola recipes, this one bakes into a softer, more tender texture—perfect for snacking straight from the jar, sprinkling on yogurt, or packing for low-impact trail days.

Ingredients:
3 cups old-fashioned oats
1/4 cup chopped hazelnuts
1/4 cup chopped pecans
1/4 cup unsweetened coconut flakes
1 teaspoon cinnamon
1 teaspoon flakey sea salt
2 scoops plain protein powder
1/4 cup coconut oil, melted and slightly cooled
1/4 cup unsalted butter, melted and slightly cooled
1 medium banana
1/2 cup pure maple syrup
1 tablespoon pure vanilla extract
1/2 cup chocolate chunks
1/4 cup freeze-dried banana chips (find them at Trader Joe’s!)
Optional Mix-Ins: 1/4 cup white chocolate chips, 1/4 cup chocolate malted eggs, 1/4 cup pistachios, walnuts, or your favorite nuts!
Baking Equipment:
1 medium microwave-safe bowl
Spatula
Instructions:
Preheat the Oven & Prep the Baking Sheet: Preheat the oven to 350°F and position a rack in the center. Line a baking sheet with parchment paper and set aside.
Mix the Dry Ingredients: In a large mixing bowl, combine the oats, nuts, coconut flakes, cinnamon, sea salt, and protein powder.
Combine the Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, butter, banana, maple syrup, and vanilla extract until smooth.
Mix Everything Together: Pour the wet mixture over the dry ingredients and stir until fully coated.
Fold in the Chocolate & Mix-Ins: Gently fold in the chocolate chunks (and any additional mix-ins) until evenly distributed.
Bake the Granola: Spread the granola onto the prepared baking sheet in an even, compact layer. Press down firmly with a spatula or the back of a measuring cup to help create crunchy clusters. Place freeze-dried banana chips on top. Sprinkle with additional flakey sea salt. Bake for 20–25 minutes or until golden brown, rotating the pan halfway through for even crisping. Do not stir during baking.
Cool Completely Before Breaking Into Clusters: Let the granola cool completely on the pan without touching it. Once fully cooled, break into crunchy clusters and enjoy!
